Salt

Indicative of the diversity of our region Sunsalt is an innovative production company mining salt from the natural saline environment of the Murray-Darling Basin.  Helping to save the environment by reducing inland salinity, Sunsalt pumps saline underground water onto existing salt-affected sites, where high evaporation rates and low humidity create the right conditions for crystallisation. Naturally-occurring minerals give the resulting salt a pinkish colour.  The salt of choice at Jamie Oliver's new Melbourne restaurant "Fifteen" is Murray River Salt which is winning awards and being widely acknowledged by the hospitality industry locally, nationally and internationally.
